A Pimento Cheese Recipe to Remember

Here, chef Mike Smith shares his recipe for a yummy pimento cheese dip perfect for a picnic or party. We can’t get enough!

Pimento Cheese Dip
Makes about 2 lbs.

Ingredients
1 lb. whipped cream cheese
½ lb. shredded cheddar cheese
1 c. roasted red bell peppers (minced)
1 tsp. Kosher salt
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. lemon juice

Instructions
1. Place cheeses and bell peppers in a nonstick baking dish in oven and heat at 350 degrees for 10 minutes or until cheese just starts to melt.

2. Remove from oven and add remaining ingredients.

3. Mix well and refrigerate at least 1 hour.

4. Serve with hummus chips or pita chips.
